Le présent colloque vise à montrer, en s'appuyant de manière exemplative sur l'histoire bruxelloise, comment les villes tirent nombre de leurs traits caractéristiques des défis posés par l'alimentation de leurs habitants, et ce depuis le Moyen Âge. Les réponses urbanistiques, sanitaires et économiques proposées pour résoudre l'afflux d'une population attirée par la vente ou l'achat de produits alimentaires ont façonné la physionomie actuelle des villes... et se montrent d'une actualité étonnante qui fait écho aux défis contemporains.

Foodways and Heritage

International Conference organized by the Chinese University of Hong Kong (Department of Anthropology). In collaboration with the UNESCO Chair "Safeguarding and Promotion of Cultural Food Heritages" (University François-Rabelais of Tours, France).This conference aims to :1. look at the politics of foodways and heritage, 2. investigate how different kinds of food are produced, sustained and inherited, 3. investigate how they are preserved as intangible heritage for various reasons.
