Sharing meals. Social aspects of eating and cooking together
Eating involves many other dimensions than just ingesting food. It is especially a social act, as it involves the social position and relationships of the individual in all of the included practices: supplying, cooking, dressing, ordering, ingesting, clearing, washing-up, managing left-overs, etc. This symposium offers to explore, with a social science approach, the different dimensions associated with sharing meals (non exhaustive): Cultural differences in the manners of sharing meals; Specificity of the sharing of cooking times regarding the sharing of meal times; Use of commensality as a social action mean; Symbolic representation of the benefits of sharing meals (psychological, physiological, social); Comparison of meals regarding other eating times (snacking); Political/Diplomatic use of meals; Organization, perception and role of meals in institutions (school canteens, hospital, nursing homes, prisons…).

Cuisine and culture in the globalized 21st Century World
Cooking is one of the most interesting characteristic of one culture. It gathers indeed material aspects (ingredients, tools, places) and symbolic values (representation, type of meals) that are often shared by social groups, while varying a lot at a global point of view. From this perspective, cooking can be considered as ritual. The cook has indeed to respect codes and rules (regarding places, technics and materials) that are linked to specific representation, to create a product that eater(s) will believe can be eaten – that’s to say incorporated, physically and symbolically.

En proposant l'entrée par la notion de « rituel », ils s'agit d'insister sur le fait que les pratiques culinaires associent des personnes, des gestes et des représentations sociales dans des cadres précis posés collectivement.

Social Factors and Cross-cultural Aspects of Culinary and Eating Behaviors and Practices
9th International Research Symposium - Institut Paul Bocuse
The ninth edition of the Institut Paul Bocuse International Research Symposium aims at sharing the ongoing fundamental and applied research on the Social Factors and Cross-cultural Aspects of Culinary and Eating Behaviors and Practices. A series of talks by international scientists from various disciplines will address the most recent scientific advances in the understanding of: i) the social factors of food behaviors and preferences in various populations, ii) the key factors involved in the evolution and spatial diffusion of cross-cultural aspects of food practices and behaviors. The applied perspectives will be considered as well: R&D experts will discuss how they take the social cross-cultural differences into consideration in the development of new food offers or new services to international clients.

Consumers and producers' perspectives
The eight edition of the International Research Symposium aims to share up-todate research on managing hunger and satiety both from the consumers and from the producer’s perspectives. This day will be devoted to address appetite and food intake mechanisms in relation to pleasure and health in a product context or a food service context. Normal and healthy eating will be discussed as well as some mentions of overeating and obesity or under eating and denutrition. A range of speakers from both academic and industrial sectors will share their knowledge and understanding of hunger and satiety and their relation to eating behaviors. The issue will thus be addressed on both physiological, psychological and social levels.

Consumers and producers’ perspectives
The Research Symposium welcomes, once a year, international researchers and professionals to present their work and discuss issues related to food and hospitality. Each year, a specific topic is addressed from the point of view of multiple scientific fields such as health sciences, nutrition, psychology, cognition, sociology, economics, etc., offering an enriching overview on different topics. The eight edition of the International Research Symposium aims to share up-to-date research on managing hunger and satiety both from the consumers and from the producer’s perspectives. More, this day will be devoted to address appetite and food intake mechanisms in relation to pleasure and health in a product context or a food service context.

D'abord découverts dans l'orient, le thé et le café constituent aujourd'hui les deux boissons les plus consommées quotidiennement après l'eau. Cet étendue géographique et temporelle rend intéressant le croisement des regards sur leurs représentations culturelles dans les langue et les pratiques. Nous réunissions, à cette occasion, des anthropologues, des historiens, des littéraires, des linguistes, mais aussi des professionnels autour de cinq thèmes : boissons au quotidien ; boissons et identité ; boissons dans l'histoire ; déguster et décrire ; mots et esprit.

Symposium du Centre de Recherche de l'Institut Paul Bocuse
Each year, the Institut Paul Bocuse Research Centre welcomes researchers and professionals to exchange over a theme from various angles: biological, psychological, social or economic approaches.For its 2012 edition, the conference concerns the eating behavior of young adults. Indeed, youth is a critical phase that allows the transition from adolescence to adulthood, a period where individuals’ culinary and eating behaviors are constructed. The question can be raised of how far young adults are willing to go on with their family eating habits and how far they wish to break with transmitted values and build new schemes. -

With the PhD Workshop, the research center of the Institut Paul Bocuse intends to create a unique opportunity for scientific exchanges for PhD students of both the Institut Paul Bocuse and other universities, without any distinction of discipline. The workshop will combine interventions from experienced researchers (plenary lectures), practical application of research methodologies (tutorials), presentations and discussion of PhD works (PhD sessions) and scientific exchanges. For its second edition, this event will focus on the following topic: Intercultural comparisons of eating habits & food preferences. -

Chaque année, le Centre de Recherche de l’Institut Paul Bocuse organise un Symposium de Recherche. Il rassemble chercheurs, professionnels et industriels venus du monde entier. L’objectif de cette rencontre est le partage des dernières connaissances de la communauté scientifique et du savoir-faire des professionnels autour d’une même préoccupation. Pour sa troisième édition, le 4 juin prochain, le Centre de Recherche étudiera les problématiques liées à la place des céréales dans l’alimentation d’aujourd’hui et leurs relations aux plaisirs, à la santé, et à l’économie. -
